A comfort food of the Chilean people, Cazuela is nothing short of an excellent choice dish. Corri is the indigenous Mapuche soup from which the Cazuela dish has its origins.
Corri was originally made with potatoes, pumpkin, corn or cornmeal, along with green beans, red peppers, quinoa, chili, wild herbs and it is accompanied by an animal, ranging from wild game to chickens.
The dish is named cazuela after the large vessels that is used for its preparation. Peninsula ingredients was incorporated to these stews.
